Wafel-Bitte
At the beginning of the COVID outbreak in 2019, my daughter Alexis and I were looking for something meaningful to keep ourselves busy while stuck at home. As an entrepreneur with other start up experience, I wanted to teach Alexis how to take an idea for a business and turn it into a reality. Alexis was particularly fond of baking and we wanted our business to produce something that would make people happy.
Having lived in Europe before moving to Madison Alabama, we were familiar with how an authentic Belgian Liege Waffle should look and taste. And we realized there was nobody else making and selling them in our community. We knew this was a perfect opportunity and began experimenting and perfecting the recipe until we had it just right. Others who sampled the waffles loved them!
I then coached Alexis through the process as she obtained all of the required business licenses, permits, tax ID, etc. and Wafel-Bitte (translation: Waffle Please) was born! Although Alexis is now away serving in the United States Air Force, I and a team of others continue to grow the business selling in a growing number of local markets and fulfilling special orders.
Our waffles are made from scratch. Each batch makes ten waffles and takes approximately 1.5 hours to rise. After the batter rises, we add Belgian Pearl Sugar which we import from the country of Belgium. The batter rises again for 15 minutes after which we place 1/2 cup of the batter into the waffle iron! Then we sit back and watch the magic happen! Delicious and authentic tasting Belgian "Liege" waffles.
